Monday, we meet again. Does anyone else feel like Saturday and Sunday always seem like a blur? There's just not enough time in the day! We did make sure there was enough time for collard green wrap making though, and we're sure glad we did.
While at the farmers' market on Sunday, we picked up some heirloom tomatoes, a mini (yes!) watermelon, carrots and collard greens. We knew exactly what those collard greens were for. Wraps! And we wasted no time getting going on them.
We simply removed the stem, filled them with homemade basil hummus, shredded carrot, avocado, cucumber and sprouts and rolled 'em up like a burrito! We also recommend dipping them in homemade peanut sauce (powdered pb, liquid aminos + water) because everything's better with peanut butter, duh.
