MUST MAKE MONDAY

Happy new week + happy Summer! Yesterday we sold at the Acton Boxborough Farmer's Market and we're now wondering why we don't sell at more of them, so fun! Super cute atmosphere, friendly customers, live music, fresh bagels, veggies and local products. What more could you want? We snagged a "Health Bagel" and thought is was the perfect vehicle to transport this homemade beet hummus into our mouths. It did not disappoint, and you must make it.

HERE'S HOW:

- beets

- chickpeas

- lemon juice

- tahini

- garlic

- spice blend of choice

- water

Put all ingredients in a food processor and blend until smooth, adding water as you go.

Who can resist eating something that's hot pink?! Then, if you're like us, you'll layer it with spinach, red onion, sprouts and cashew cheese and have one heck of a breakfast sandwich.
