Happiest Monday! We're seeing 70 degrees in the 7 day forecast and making headway on our long, exciting list of orders. It's going to be a good one. But first, we have to share our favorite recipe as of late. Since the warmer temps are coming (YESSS!) we have to satisfy our roasted veggie craving a few more times, before it's all about fresh, grilled + sweet, sweet Summer produce. This recipe is SO easy and something that is great to make in a big batch so you can enjoy leftovers throughout the week.
Our go-to is brussels sprouts but this will work for any root veggie as well (hello butternut squash, carrots and sweet potatoes). Simply line a baking sheet with parchment paper and heat the oven to 400 degrees. Wash, chop and place veggies on a lined baking sheet and toss with herbs and spices of choice. We love 21 Seasoning Salute from Trader Joe's. It's super tasty and doesn't contain salt. There are so many other great ways to bring out the natural flavors of food, it's great when you can take advantage of them! Put the veggies into your preheated oven and turn occasionally until they are brown and slightly crispy on the edges. Perfection.
