Three ingredients + spices and you've got your very own bowl of this goodness. We l-o-v-e roasted veggies for their flavor and convenience. Roast up a big batch and eat 'em hot or cold. It's a total no brainer! We used a mix of orange, purple and white sweet potatoes, vidalia onion and firm tofu, all sliced/cut into chunks. Once the goods are prepared, lay on a baking sheet lined with parchment paper and sprinkle with spices of choice, sweet or savory works here! We used Trader Joe's 21 Seasoning Salute, smoked paprika and chili powder. Coat everything evenly and pop into a 400 degree oven for about 45 minutes. Then devour immediately. Or save leftovers for the week, whatever.
