MUST MAKE MONDAY

Christmas calls for a fancy breakfast and this year did not disappoint. Vegan french toast, guys. Need I say more? And in all honesty, easier than it's egg-soaked cousin. Here's the deal:

VEGAN NOG FRENCH TOAST

Ingredients:

- 2 medium sized bananas

- 1/2 cup vegan nog (I used Califia Farms Vegan Nog)

- 10 slices of cranberry pecan bread (I used Iggy's Cranberry Pecan Bread)

- Cinnamon + nutmeg

Method:

- Mash banana in a bowl

- Add nog, cinnamon + nutmeg and wisk together

- Soak bread in mixture

- Transfer to a hot skillet lightly coated with coconut oil

- Cook until golden brown and slightly crispy on both sides

 

I think Monday called for a fancy breakfast, too, just sayin'.
